Wedding Cake

A friend just emailed me the following link. It says that Chelsea Clinton’s wedding cake was gluten-free and vegan.

While that may sound weird to people eating the standard American diet, it’s great press for allergen-free diets. Yes, we can have gluten-free, dairy-free, egg-free, and whatever else-free cake!

Some of us cannot eat normal cake ingredients because of celiac disease and/or food allergies. Some of these food allergies can make us seriously ill or even be life-threatening.

There are a variety of recipes for cake in allergen-free cookbooks and on the web. But if you don’t want the hassle of gathering the ingredients and baking, people near Seattle can special order allergen-free cakes from the Flying Apron bakery in Fremont.

The Flying Apron’s cookbook came out this year, and I would recommend it more than any other baking cookbook for people with multiple allergies. Their scones and cupcakes, in particular, are wonderful.

It is exciting to see this kind of wedding cake featured in the news. It shows that allergen-free products are becoming mainstream and we special diet people don’t have to go without on special occasions.
