Those of us with celiac disease and gluten intolerance can become very ill from minute amounts of gluten, the protein in wheat, barley, and rye. Years ago the FDA was tasked with making proper gluten-free labeling a reality. Yet we are still waiting for this to happen.
On May 4th, a Gluten-Free Food Labeling Summit will take place in Washington D.C. To emphasize how many people are affected by such labeling, and underscore the importance of making the FDA follow through, the world’s largest gluten-free cake will be on display. From http://www.1in133.org/:
